Met up with this cute family for some much needed updated family portraits. Mom was really worried the kids weren’t going to cooperate, but it was all for nothing!  The kids were awesome little troopers, and mom got the family portraits she’d been wanting for years.  I call that a win.W_fam_1

Trick or Treat 2013

So I know that Halloween was totally last month’s news… But, getting a Halloween post up before Easter is a major accomplishment for me!  Yay me!  Uh, speaking of Easter, I think I forgot to do a post… oops!

Although I had most of what we needed a couple days prior, I, of course waited until THE day of Halloween to actually work on the kids’ costumes!  Thanks to some liquid stitch, a glue gun and a stapler, I finished in time and they didn’t have to go as ghosts!  Better late than never, it’s Wonder Woman and The Lone Ranger!!

A wiggle, wiggle, wiggle… {San Antonio Family Photographer}

An awesome little family session… the weather was nice and the light was gorgeous! We broke for animal crackers, we sang Sesame Street and Yo Gabba Gabba songs!  It couldn’t have been more laid back!  Of course, I’ve had “There’s a party in my tummy” and “Hold Stilllllllllll…” stuck in my head ever since!  “…a wiggle, wiggle, wiggle…”  Yeah, try turning THAT off!  HA  Thanks for the fun time, W family… you’ve reminded me that I need to brush up on my preschool songs, maybe look into singing lessons and helped reaffirm just how much I LOVE photographing families!  Hope you enjoy your sneak peak… I had a hard time choosing, so here are a few plus twenty, give or take!

Toss those rice cakes in the trash

For about two years we’ve been on a diet, um health kick, err we’ve made a “lifestyle change?!?” (more on that, later).  Any way you want to call it, the fact of the matter is we try our damndest to eat better!  But, here’s the deal… we like food.  Shocker, I know!  And, giving up junk food was is hard.  I don’t mind munching on a carrot here and there, but when I’m itching for a snack, I um, Want a SNACK!  Hello?  I’m sorry, but rice cakes {ICK} and 100 calorie snack packs, are just not gonna cut it in this house.  We need tasty snacks that are healthy, filling AND satisfying.  Hello, granola!  Who doesn’t like granola?!?

MMMM… Doesn’t that look freaking amazing?  You wanna make your own now, don’t ya?
Don’t be intimidated by the crapload of ingredients… it’s so easy, A caveman can do it!

In a large bowl, toss together:

4 c old-fashioned rolled oats
1 c steel cut oats
1 c raw almonds
1/2 c raw halved pecans
1/2 c raw sunflower seeds
1/2 c raw pumpkin seeds
2 tsp sesame seeds

Set aside. Preheat your oven to 300°.  So far, so good?  Good.  Moving on.

In a small saucepan, mix yourself:

1/3 c pure unrefined coconut oil
2/3 c raw unfiltered honey
1/3 c pure agave
1/4 tsp salt
1 tsp pure vanilla
1- 1/2 tb cinnamon
2 tb chai seeds
2 tb flaxseed

Heat on low stirring constantly, until nice and syrupy. Pour that goodness over your dry stuff, and mix well. Lightly spray 2 large cookie sheets (mmm, cookies… focus).  Spread your sweet smellin’ granola out evenly on the pans.  Place one rack in the middle of the oven and the other just below it.  Bake them puppies for 10 minutes.  Pull them out, stir them, rotate your pans top to bottom and front to back.  Bake another 10 minutes and repeat the musical pans game.  Bake a final 5-10 minutes.  Watch closely, you want it a nice golden brown NOT burnt!  Trust me, that crap is nasty.  BTDT.

Cool completely.  Mix in some extra dark chocolate chips and/or dried cranberries or goji berries, whatever floats your boat, its your party!

Put your tasty granola in some pretty little mason jars, give one to your neighbor (it’s neighborly), invite people over because your house has never smelled so amazing, toss your freakin’ rice cakes in the trash, and take in the fact that you just made that.

Sorry, I don’t have the nutritional info for this because, I’m too lazy to figure it out.
Actually, I’m not sorry… All you need to know is A) It contains heart-healthy fats  and  B) It tastes damn good.  You’re Welcome!
Try not to eat the whole jar in one sitting, for goodness sake!  Stand if you must!  Just sayin’ 😉
